How to enjoy a fillet of beef

Considering treating you and your dinner guests to a delicious full fillet steak? Then you should handle it with care in order to get the most out of your purchase.

Before you cook your steak, let the meat rest until it reaches room temperature. This can take up to an hour, but it’s worth the wait! Then season the meat really well before cooking.

You should then preheat your oven to 200 degrees C for fan ovens or 215 degrees C for conventional ovens. While you wait, use a heavy-based pan and splash a tiny amount of vegetable oil in there. Get both the pan and the oil really hot on the stove before adding the meat, then add your steak filly and colour on all surface areas on intense hear for 3 to 4 minutes.

Next, place your steak in a hot tray in the centre of the oven and roast for 6 to 8 minutes. Aim to reach a core temperature of minimum 56°C to achieve a medium rare finish.

Finally, rest the meat for five minutes before carving. Now you’re ready to enjoy your whole fillet steak!
