Our goat sausages are full of flavour and truly outstanding. From locally reared adult herds that have been fed on hay and haylage throughout the year to produce a rich, full flavour, our high welfare, free-range goat is sourced from Richard Haskett who has been farming near Cheselbourne on the Dorset Downs for over 10 years.

Our naturally grown, free-range goat is hung on the bone for up to 7 days and has been hand-trimmed by our master butchers to provide lean meat with a deep, rich flavour. Grass-fed goat has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E and contains higher vitamin and mineral levels. Eating meat from animals that themselves have only eaten a natural diet rich in essential vitamins and minerals and untainted by chemicals and pesticides, makes a whole lot of sense. It’s a healthy choice to make.

What are Toulouse Sausages: A British Interpretation of a French Classic

A famous export from the south of France, the Toulouse sausage – or Saucisse de Toulouse – as it is known in its native language – is a fresh sausage with a high pork content and generous seasoning.  Sometimes sold in traditional sausage shapes and at other times sold in a swirl (much like the British Cumberland sausage), the Toulouse sausage is not only popular on its own but also in combination with hearty French dishes such as stews and, of course, a cassoulet.

Grass-Fed Rich Beef Sausages

Our beef sausages are from native breed cattle reared on small, family-run Dorset and Wiltshire farms that have been purely fed on lush, natural pastures. Grass-fed beef has a better ratio of Omega 3 to Omega 6, is high in antioxidants such as vitamin E and contains higher vitamin and mineral levels. Eating meat from animals that themselves have only eaten a natural diet of grass, wildflowers, clovers and legumes, rich in essential vitamins and minerals and untainted by chemicals and pesticides, makes a whole lot of sense. Our Red Rubys, Aberdeen Angus and Dexter breeds have been allowed to reach maturity at 30 to 36 months naturally, to produce beef that has outstanding depth of taste and texture with wonderful marbling.
