Nestled in the Wiltshire countryside on the edge of the Longleat Estate, September House  are dedicated to producing high-welfare artisinal products that embrace ethical farming practices, regenerate the soil and encourage biodiversity and  sustainability.

Remove the quiche from all of it's packaging and place on a plate in the fridge.

To heat, place on baking tray loosely covered with foil and put into a preheated oven (180C) for 10 to 15 minutes.

Consume within 3 days, do not refreeze. This product will previously have been frozen and will arrive in a thawed state.

We started making quiche lorraine’s several years ago—mainly because our flock of chickens were laying very well, and we had more eggs than we knew what to do with. Even after selling to neighbours and friends, we still had plenty left. The first cheese and tomato quiche I made was demolished in no time, and the rest of the family convinced me to try selling them to local delis and shops.

It turned out to be a great idea—our quiches quickly gained a loyal and growing following.

I genuinely believe one of the main reasons people love them so much is the quality—and localness (if that’s a word!)—of the ingredients. Our “rainbow eggs” are already well known in the area, and when combined with local double cream, extra mature cheddar, hand-harvested salt from Chesil Beach in Dorset, and either our own or local ethically reared rare breed organic pork (for our Lorraine), it really does make all the difference.

We were lucky enough to have had dinner at the Osteria recently where we met Marco Masselli, the second generation proprietor of this wonderful Florentine restaurant that was featured in Stanley Tucci's highly acclaimed television series 'Searching For Italy.' Wild boar ragu with pappardele is one of the Osteria's signature dishes.

We thought it was so special we decided to bring a little bit of Florence back to Dorset!

Our Beef Wellingtons have been prepared by our Dorset chefs to provide you with a timeless British classic ready to enjoy at home. Using grass fed, centre-cut West Country beef fillet, our Beef Wellington is wrapped in prosciutto with a, rich, earthy  mushroom duxelles with a crepe surround and then finished with a light, latticed pastry casing.

This stunning dish has all the hard work already done for you and is ready to serve at home.

Cooking instructions.

Take out of the fridge and leave out for 30 to 40 minutes to allow the Beef Wellington to  come to room temperature.

Pre-heat your oven to 160 degree centigrade (fan assisted) and place the Beef Wellington on a baking tray until the pastry is crisp and golden in line with the following cooking guide:

Rare: 600g (20 to 25 mins) : 1.2kg (30 to 35 mins)

Medium: 600g (25 to 30 mins) : 1.2kg (35 to 40 mins)

Well done: 600g (30 to 35 mins) : 1.2kg (45 to 50 mins)

Rest for 10 minutes and slice with a sharp knife.

We like to pair ours with a Gratin Dauphinoise and French beans.

600g serves 2 people: 1.2kg serves 4 people.

Our Beef Wellington will have previously been frozen and will arrive thawed or partially thawed.

Ensure the product is thoroughly defrosted before cooking. Place in a fridge and use within 2 to 3 days of delivery.

Prepared on surfaces that may have traces of milk, egg, wheat, soya, mustard, nuts and sesame.

Do not refreeze.
